Food Labs Guidelines!

Rules for Personal Hygiene Wash your hands thoroughly with soap and water! Dry your hands with paper towels Avoid touching you face, hair and other objects Wear gloves if you have cuts on your hand Clothing should be clean and well fitted!

Rules for Cleanliness in Food Prep Area Keep food prep area clean Always use clean utensils and equipment Wash and dry dishes thoroughly before you use them and/or put them away Wash dishes before you use them Sanitize counter tops and sinks before you leave your lab stations Make sure the island counter top is clean as well If you spill it or use it you need to make sure it is cleaned up and the area around it is clean!!! If you leave you lab counter or sink un sanitized or dishes wet, you will lose your next lab!

(dish washer, “head chef”, production, runner, ect.)‏ REMEMBER: If you have time to lean, you have time to clean or work on your assignments!

Guidelines Grades Your grades for labs are based on participation Each time I see you off task, ten points will be taken off your grade If you do not assign jobs or fill out portions of the lab sheet 10 points will be deducted for each thing you miss If you leave the room before your lab station is clean points will be deducted and you will loose a lab You will be given warnings, if I have to keep telling you, you will loose your lab The second time you will loose the next FULL lab

Guidelines Cont’d When working in a food lab work quickly and quietly Stay on task so that you can finish your lab and enjoy the finished product and be on time to your next class When you are not in a food lab stay away from the kitchens! You have your own work to do.

Assignment Before we can begin the food labs we will need to be able to read recipes and you will need to practice filling out the lab sheets We will go over the lab sheets first Then with your lab group you need to complete the lab sheets Individually you need to complete a Lab Evaluation
