© K3 Business Solutions 2014 Unauthorised reproduction strictly prohibited Business Challenges Businesses in the Fresh Produce sector typically face a series of challenges including (but not limited to): The final customer sales order will be received only hours before despatch is required. By virtue of being perishable and/or date-labelled, product cannot be delivered from stock. Despatch of finished goods and consequent completion of packing is time-critical. Production must start before the final sales order is received [‘Pack-ahead’] and sometimes more is packed than is ultimately required. This ‘Over-pack’ cannot be placed into stock due to the short shelf life, therefore has to be ‘Re-packed’ against another order. The quality of different batches of the same raw material will vary, thus yields and production run-times are not simply dependent on the quantity of finished product; raw materials quality must be recognised. The number of workers required will vary each day and ‘agency’ or ‘contract’ workers are common, but there must be a sufficient number of workers scheduled daily to fulfil production. It is difficult to measure actual consumption and waste with the time-pressure on production, and when many of the workers are temporary or unskilled. Pallets must be planned/built and transports loaded in an efficient manner to Customers’ specifications. Growers/suppliers may be paid based on the quality or consequent profitability of their produce.
