History of Soave In 1931, Soave was declared one of the first official wine denominations along with Chianti In the late 1940’s, returning GI’s from WWII come home with a taste for Italian wine. Soave’s popularity begins to boom In 1968, Soave DOC was created In the 1970’s, Soave becomes the most popular Italian DOC wine in the US Market beating Chianti and Pinot Grigio In the early 1990’s, small, quality driven producers begin to push back against co-ops and demanded action from the Consorzio to improve quality standards 1998 to 2001, the Soave Consorzio launches one of the largest studies ever done on a single wine region In 2001, a separate Soave Superiore DOCG

Location of Soave Located East of Verona Three times larger today than in 1931 The original zone is now known as the Classico zone Mild continental climate Hot summers Cold, wet winters Dense fog in Fall The soil in the eastern part of the Classico area is high in volcanic rock, and the western section is higher in limestone

DOC & DOCG Regulations Can have up to 30% Trebbiano di Soave or a blend of Trebbiano di Soave and Trebbiano Toscana where the Trebbiano Toscana does not make up more than 15% of the total blend The vineyard yield must be under 5.6 tons per acre A minimum of 10.5% alcohol All Soave DOC and DOCG wines must come from the Soave production zone, and both wines require a minimum of 70% Garganega. Can have up to 30% Pinot Bianco, Chardonnay, and Trebbiano di Soave. Grapes 100% Garganega Vineyard Location From vineyards located in the hills of Roncà, at the foot of the Lessini Mountains Vinification & Aging Process The grapes are harvested by hand followed by 24 hours cold maceration and fermentation in stainless steel. The wine ages in stainless steel on the lees for three months followed by bottle aging Tasting Notes Bright straw yellow color with fruity, floral notes of white fruit and banana. On the palate the wine is harmonious with good persistence and a bitter almond finish Soave “Corte Giaccobe” DOC Stelvin Delux

Grapes 100% Garganega Vineyard Location From a vineyard located on a plateau 1,300 feet above sea level, between two volcanoes: Calvarina and Crocetta Vinification & Aging Process The grapes are harvested by hand, and soft pressed using the “Inertys” process which protects must from oxidation. The wine is fermented and aged in 20-hl. barrels for one year before aging in the bottle for four months Tasting Notes Straw yellow color with golden-bright green hues. The intense nose has persistent notes of florals and dried fruit. The palate is warm with an excellent body. Intense and very persistent this is a very structured wine Soave Superiore “Runcata” DOCG
