GOIERRI The Goierri region is known for its varied cuisine and its top quality produce. The most typical products of the area are associated with its grazing pastures, like Idiazabal Cheese made from the latxa sheep´s milk, charcuterie like Zaldibia´s mondeju sausage and Beasain´s black pudding, handmade in the area´s farmhouses, beans, mushrooms and a variety of fruits. The region is also known for its cider and txakoli wine. These products are at the heart of the traditional markets of Ordizia and Tolosa.
