The use of Jack O'Lantern as lights for Halloween festival is a custom coming from the Irish who used carved out turnips and put inside a burning candle. These lights represented the souls of the dead or goblins freed from the dead. When the Irish emigrated to America, they could not find many turnips to carve into Jack O'Lantern, but they found plenty of pumpkins and, since then, they used them for Halloween celebrations. Jack is an Irish man that played tricks on the Devil a lot of times, so when he died, he was refused by Heaven. He wandered around the world holding a lantern to lit his way.

The festival starts after dark when children are masked and try to scare their friends. The symbols of Halloween are: Jack O’lanterns, pumpkins or turnips with a lantern inside and scary monsters. In the USA and Great Britain, young children make trick or treat and say every time “ Trick or Treat -Smell my feet- Give me something - Good to eat!“. The typical Halloween refreshments are pop corns, pumpkins and apple pies or cakes, toffee apples and apple drinks.

Symbols The symbols of Halloween are scary monsters and pumpkin lanterns called Jack O’lanterns.

The Jack-o’-lantern Take a pumpkin and make a small hole on the top, then empty the inside. By a pencil draw eyes, nose, mouth and then cut them by using a knife. Finally put a burning candle inside the pumpkin.

Trick or Treat On the day of Halloween children, dressed up in macabre costumes and masks, roam the house doing "Trick or Treat". They usually receive a Treat as sweets or money and for people who do not give anything they make a Trick.

PUMPKIN CHEESECAKE INGREDIENTS Sugar = 200 g Cinnamon = 1 tablespoon Ginger= 1/2 teaspoon Lemon juice=3 tablespoons Pumpkin pulp = 250 g Philadelphia = 500 g Eggs 2 = Yolks 2 Cream=200 ml fresh Salt=1 large pinch of salt Water = 60 g PREPARATION Start by preparing the biscuit base : Put the biscuits in a food processor and two tablespoons of brown sugar (1) and whisk together until the mixture is mealy. Pour the powder biscuits in a bowl, then melt the butter and mix the biscuits ( 2 ).

When the mixture is ready, transfer it into a pan of 24 cm in circumference, buttered and lined with parchment paper and, by a spoon, press the mixture on the bottom(3), making it adhere well on the sides. To flatten the cookies, wet the base with 30 grams of water. Place the pan in the refrigerator for at least 30 minutes and, in the meantime, prepare the cake batter. First prepare the pumpkin squash : Wash it, peel and cut the flesh into small pieces, then cook in a pan, over medium heat, with 60 grams of water for 20 minutes (4). Put in a blender the fresh cheese and sugar(5)along with the pumpkin flesh, softened and cold(6). Operate the mixer and then mix everything for a few minutes. At this point, add the ginger, cinnamon, salt and lemon juice(7), fresh cream(8)and eggs(9). Operate the mixer again: the result will be a smooth and creamy compound. Pour the mixture into the pan(10)and bake your cheesecake in a preheated oven at for 50 minutes. Once ready, let it cool in the oven to make sure that it does not drop, then pull it out and let it cool down properly(11). Create the decoration : melt in a bain-marie 100 g chopped dark chocolate and, by using a syringe for sweets with a thin nozzle(if you have not used a cone of parchment paper)draw on a spider web on the cheesecake (12). At a corner of the web, draw the legs of a spider, using a round dark candy or a chocolate for the body. Refrigerate for at least 3 hours.... and there you have your cheesecake with pumpkin and spider web !
