PH GINGER Organoleptic characters: Colour : buff Odour : agreeable & aromatic Taste : agreeable & pungent Size : 5 to 15 x 1.5 to 6.5 Shape : laterally compressed bearing short flat,ovate & oblique branch on the upper side, with bud at apex Fracture : short Fig.23.3.

PH GINGER Chemical Constituents : 0.25 – 3% Volatile oil 5 – 8% Resinous matter and Starch Volatile oil contains: Zingiberene (main constituent) Gingerol (pungent principle)

PH GINGER Chemical test : 1. Boil the drug with 2% Potassium hydroxide Pungency of Gingerol is destroyed

PH GINGER Standards : Water soluble extractives : not less than 10% Alcohol soluble extractives: not less than 4.5% Total ash : not more than 6% Water soluble ash : not less than 1.7%

PH GINGER Uses : Carminative Stomachic Flavoring agent Storage : coated with lime to improve colour and quality, hence this variety is known as Limed ginger.
