Food For Thought IN FOLDER: What is your favorite cookie?

Six types of cookies: 1. Scooped or dropped 2. Pressed or Bagged 3. Rolled 4. Molded 5. refrigerated 6. Bar or sheet

Drop cookies chocolate chip and oatmeal made from a soft dough dropped from a spoon

Bagged or Pressed cookies Ladyfingers,macaroons, spritz piped through a pastry bag Pressed through a Cookie Press

Rolled cookies sugar cookies rolled out and cut in shapes

Molded cookies peanut butter cookies molded by hand into shapes Ex: Peanut butter cookies are molded by hand and then marked with fork lines

Refrigerator cookies Dough you buy in the store dough is rolled in logs and chilled; then sliced and baked

Bar or sheet cookies Brownies long bars or fill sheet pans, and then are cut into bar shapes after baking

Creaming Using paddle attachment, cream fat and sugar for how long? Scrap down sides of bowl. Add eggs; beating after each one. Add mixed dry ingredients. Alternate adding dry with liquid; always ending with dry

Creaming Method used for cakes and cookies with greater amounts of fat. Ingredients should be at room temperature. Weight dry ingredients and measure liquids. Mix all dry ingredients except sugar; Why? Prepare pans.

Baking pans are costly, and may start to look old and well-worn after only a few uses. To save the appearance of your pans, eliminate the need for greasing, and to make removal of baked goods easy… you may line the pan with parchment paper. Parchment paper is NOT the same as waxed paper.

Space cookies on the cookie sheet for baking, leaving enough space so they won’t touch. Preheating the oven to the correct temperature is critical! Adjust oven racks so you can bake in the middle of the oven! If rack is too low, food gets too brown on the bottom; if rack is too high, food gets too brown on top.

After Baking… Cookies are removed from the oven cooled for a couple of minutes removed from the pans with a spatula placed on a wire rack for cooling.

Cookie Tip Always Cream Fat and Sugar Do not overbake! Cookies will continue cooking after they come out of the oven!
