Why ISO 22000? Enable system-wide management and harmonization of standards (domestic and international) Control food safety hazards through robust pre-requisite programs and HACCP Continual improvement and updating of the food safety management system Provides clear international standards for food safety that can be applied and communicated to third party suppliers and vendors (e.g. sanitation) Aligns with the management system standards of ISO 9001 and ISO DR. Benefits of ISO Systems management vs issue management Resource optimization Food safety built-in (better planning) Dynamic communications Extensive training → knowledge, understanding and skills. Do the right thing? Ensure all food safety hazards addressed Improved documentation Ensure legal requirements met (food code, etc) Efforts that go beyond the minimum – meeting the highest consumer expectations Do what you say? Verifications (audits and checklists). Make a difference? Continuous improvement Validate food safety management to stakeholders (shareholders) DR. BRIAN A NUMMER © 2014

The ISO Food Safety System Management Team (right people, right resources) Documentation (Polices, Pre-requisites and HACCP) Implementation (communication and training) Implementation (monitoring and recordkeeping) Implementation – local corrective actions (putting out fires) Auditing - Verification (are we doing what we say we do?) Auditing – Validation (are we doing the right thing?) Metrics and evaluation (how do we measure up?) Improvement - global corrective actions (making system fire-proof) DR. BRIAN A NUMMER © 2014
