 Our topic in Seminar this week is to discuss the importance of dietary fiber.  Fiber = roughage ; we cannot digest cellulose in plant cell walls, but we use it for “bulk”.  mainly in fruits, vegetables, whole grains and legumes  best known for its ability to prevent or relieve constipation.  Has other health benefits as well, such as lowering your risk of diabetes and heart disease

 Let’s go on a quick field trip and quiz ourselves on what we know about fiber, then see how much fiber we need, and finally gather some high fiber content foods to bring back to the discussion.  Click on Information box and follow the links.

 How did you do on the interactive quiz?  How much fiber do you need a day?  What is Insoluble Fiber vs soluble fiber?  What are some good sources or examples of fiber?

 1. Why is dietary fiber beneficial?  2. Specifically how does fiber reduces the risk of certain diseases?  3. It has been proposed that a high fiber diet reduces the risk of colon cancer? Why might that be so?
