Metal Hotel pans: Uses: preparing food, cooking in oven, reheating, food storage for service on steam table, For Cooking- spray with cooking spray to help with dishwashing Plastic Hotel pans: Uses: cooking, reheating in microwave, ( Not in oven.) holding food in steam table, Storage of food- mise en place, fridge, or freezer. 2 Pots, Pans, and Containers Uses of Containers
