Individual Chocolate Layer Cakes ½ cup of cocoa powder 1 cup flour 2/3 tsp baking soda 1/8 tsp baking powder 1/8 tsp salt ¾ cup sugar ¼ cup hot water ½ cup buttermilk 1 stick melted butter 1 large egg ½ tsp vanilla extract 1 cup heavy cream 1 cup shredded coconut ¼ cup sugar Pre-heat the oven to 350oF. In a large mixing bowl, mix the dry ingredients. Using a hand mixer, add the butter and water. Mix until combined and then mix in the buttermilk, egg, and vanilla until evenly dispersed. Fill 6 buttered ramekins ¾ full with cake mixture and add to a water bath (use a baking dish and add boiling water to half way up the sides of the ramekins). Bake for 30 minutes or until a inserted tooth pick comes out clean. Let cool and remove from ramekins. Meanwhile, whip cream. Add the sugar and coconut. Once the cakes have cooled, slice the cakes into three even layers. Add the coconut cream, top with a sprinkle of toasted coconut and serve! Silver Caterers Recipe Cards – Chocolate Layer Cakes
