OBJECTIVE 2: Understand the swine industry and the numerous products that come from swine. The swine industry includes the different types of operations used to raise hogs & the different products and by-products produced from hogs. The swine industry has made great strides in the past twenty years to produce a very lean and trim hog compared to those in the past. The U.S. swine industry brings in over $10 billion dollars in sales each year. The United States is the third largest swine producer in the world.

A. There are two basic types of swine operations 1. Feeder pig- producers keep many sows that give birth to two litters of piglets each year. The feeder pigs are then sold to the market hog producers when they are about five to eight weeks old. 2. Market- hog producer feeds the young pigs until they reach a market weight of 220 to 240 pounds; which takes about 6 months. They are sold to a processing plant to be harvested.

Pork - The meat obtained from a pig. Examples of pork are ham, sausage, bacon, pork chops, ribs, and tenderloins. When a 215-pound hog is harvested, it will usually result in a 150 pound carcass once all of the unusable portions are removed. Pork is the second most consumed red meat in the U.S.
