What Is a Recipe? Recipes are useful for all cooks, from beginner to expert. Most recipes list ingredients first, then directions. recipe A set of directions for making a food or beverage.

What Is a Recipe? A well-written recipe provides: list of ingredients. yield. cooking method. temperature and time. container size and type. step-by-step directions. nutrition analysis. yield The amount or the number of servings that the recipe makes.

Weights and Measures Recipes work best when ingredients are measured correctly. Different units of measure are used for volume, weight, dimensions, and temperature. volume The amount of space an ingredient takes up. weight The heaviness of an ingredient. 5

Changing Recipes Ingredient Substitutions

Changing Recipes Some recipes take substitutions easily; others require specific ingredients and precise measurements. Changing non-essential ingredients has little effect on the final product. Changing basic ingredients alters a recipe’s appearance, taste, and texture.

Collecting Recipes Recipes are found in the library, cookbooks, magazines, newspapers, and the Internet. An organized recipe collection makes cooking easier and more enjoyable. Write recipes on index cards and store in a card file box. Store recipes in photo albums. Use recipe software. Create your own cookbook.

Chapter Summary Recipes are directions for making foods and beverages. Recipes offer six types of information. Ingredient amounts in recipes may use customary or metric units of measurement. Recipes can be changed for several purposes. Recipes can be found in many places, and organized in different ways.
