Rubbing in method 'Rubbing in' is a technique where flour is rubbed into a fat to make dishes such as short crust pastry, crumbles and scones. -Using your fingertips, rub the flour and butter together until the mixture resembles breadcrumbs (fine or coarse, depending on the recipe).  -Lift the mixture up as you rub it in so that the air going through it keeps it cool.  -Shake the bowl every so often to bring the larger lumps of butter to the surface.

Chocolate Chip Cookies Ingredients 50g margarine 125g plain flour (5 tbsps) 50g white sugar (2 tbsps) 25g chocolate chips (1 tbsp) 1 egg Method Rub margarine into flour until it looks like breadcrumbs. Stir in sugar and chocolate chips. Beat the egg together with a fork. Add egg mixture to the dry ingredients a little at a time to make a stiff dough. Place mixture in small spoonful's on a greased baking tray. Bake for 10-15mins on Gas 4 / 180°C until golden brown.
