Neither in Germany not at EU-level a marketing standard for early or ware potatoes applies. However, the UNECE standard for early and ware potatoes may be applied by trade on an optional basis. There will be no governmental conformity checks as to marketing standards. 1

Early potatoes are obtained from early varieties and/or are harvested at the beginning of the season in the country of origin. “Early potatoes” means potatoes harvested before they are completely mature, marketed immediately after their harvesting, and whose skin can be easily removed without peeling. Interpretation: Varieties of early and ware potatoes are different in tuber shape, skin, flesh colour as well as depth and colour of the eye cavities. In accordance with the minimum requirements, the normal appearance of a variety may vary a little, e.g. by the shape and the appearance of the tubers. Interpretation: Early and ware potatoes must not have any damage or injury spoiling the integrity of the produce. The tubers may be damaged by mechanical causes or animal bites. Tubers are regarded as intact provided removing the affected part does not constitute more than 10 % of the weight of the tuber: a) The weight of the unpeeled tuber is determined. b) The damage has to be removed by a single cut as close as possible to the damage. c) The weight of the defective part is determined. d) The percentage of the removed part is calculated on the basis of the weight of the whole tuber. Superficial damage that can be removed by normal peeling is not regarded as a defect. Tubers showing damage as on the photo and above the limits described shall be allowed within the tolerance of 4 % (early potatoes) and 6 % (ware potatoes). not intact – damaged tuber – not allowed Не неповрежденный – поврежденный клубень – не допускается 8

In particular, tubers affected by rotting, even if the signs are very slight but liable to make the mangoes unfit for consumption upon arrival at their destination, are to be excluded.   Tubers affected by dry rot shall be allowed within the 1 % tolerance. not sound – dry rot – not allowed Не доброкачественный – сухая гниль – не допускается 9

It is advisable not to keep tubers in an atmosphere which has a desiccating effect because, in such conditions, they will probably become soft and wrinkled.
