HISTORY The city of Xi’an, situated in the north-western region of China, has long been known as the first capital of China and the resting place of the famous terra cotta soldiers. The history of Chinese cuisine is marked by both variety and change. At first Chinese cuisine was only separated in 2, North China cuisine and South Chinese cuisine, but as time grew on it became bigger and bigger.
DISHES (Spicy And Sour Minced Pork Noodles) This dish is one of the most famous examples of Xi’an cuisine. The noodle has its unique feature of chewy, smooth, thin, sour, spicy and expanse of soup, also known for a long aftertaste. The dish contains the highly nutritious value of the end of natural plants (root, stem, leaf, flower), cooked together with dozens of valuable spices. The dish has a very important position in Xi’an. The dish is a hallmark for families during important occasions such as weddings, funerals, New Year’s, and birthday celebrations.

DISHES (Hot and sour soup dumpling) (suantang shuijiao) - Who can resist a bowl of dumplings swimming in hot and sour soup with sesame seeds, minced leek and cilantro? Suantang shuijiao is flavorful and refreshing with a lingering (and pleasant) aftertaste.
Suantang Shuijiao Method Ingredients Step One: Cut the fresh agaric into pieces, slice the bamboo shoots into pieces, chop shallot and coriander (separately), and cut red chili and Chili Padi. Then mix 1/2 tablespoon starchy flour and 3 tablespoon water. Step Two: Boil those dumplings till they all float on the water (remember add some salt in the water to prevent dumplings broken) and then add some cold water three times. Step Three: Quick boil the argric and bamboo shoots in the boiled water for one minute. Step Four: Pour chicken soup and one bowl of water into the boiler, then add red chili, Chili Padi, fresh agaric and bamboo shoots. Boil them with the lid. Step Five: Add 1/2 tablespoon salt, 1/2 tablespoon soy, 2 tablespoon aromatic vinegar, 1/5 tablespoon pepper and 1 tablespoon sesame oil into the boiler, and then add the starchy flour water. Step Six: Add the cooked dumplings into the boiler, and then put some shallot and coriander. Place into a bowl and enjoy. Materials (for four people) Deep-frozen dumplings ( one bag about 800 grams), fresh agaric, winter bamboo shoots (500 grams), chicken soup (400 ml), red chili, Chili Padi, shallot and coriander. Seasoning's: Starchy Flour (1/2 tablespoon), salt (2 tablespoon), soy (1/2 tablespoon), aromatic vinegar (2 tablespoon), pepper (1/5 tablespoon), sesame oil (1 tablespoon).
Healthy or Not Xian cuisine is actually quiet a healthy cuisine, because it has almost all of it made of vegetables and not to much salt on one dish.
