Fats are solids at RT Ex: fats in meat, butter, cheese typically from an animal source Contain a higher amount of saturated Fatty Acids Called saturated fats
Oils are liquid at RT Ex: olive, canola, sunflower oil typically from a plant source (seeds/nuts) Contain a higher amount of cis-unsaturated/omega Fatty Acids Called unsaturated oils
Solid vs liquid why? Saturated Fats have a higher MP/BP they have higher Van de Waals Unsaturated oils have kinks: lower Van der Waals, lower MP/BP
