HERDADE DE SÃO MIGUEL Colheita Seleccionada White 2015 QUINTESSENTIAL ORIGIN: Herdade de São Miguel – Redondo - Alentejo VINEYARDS: Clay and schist soils. 3.300 vines per ha, North-South plantation – Cordon de Royat vine training - 10 to 12 years old vineyards GRAPES: 50% Antão Vaz, 35% Verdelho, 15% Viognier DESCRIPTION: Yellow citrus, complex aromas of tropical fruit and white flowers well integrated with butter and coconuts notes. Lively attack, a fine acidity, a full body, and the distinctive mineral. WINEMAKING Grapes were harvested by hand perfect ripeness of each parcel and variety. After de-stemming the grapes were submitted to a cold shock to make possible to macerate 12 h before press. Antão Vaz was fermented and aged for 6 months in 400 L new French Barrels. Verdelho and Viognier were fermented in stainless steel vats under a controlled temperature of 15ºC. During the ageing an weekly battonage was made on the barrels and the vats. HERDADE DE SÃO MIGUEL Colheita Seleccionada Rose 2015 QUINTESSENTIAL ORIGIN: Herdade de São Miguel – Redondo - Alentejo VINEYARDS: Clay and schist soils. 3.300 vines per ha, North-South plantation - Cordon de Royat vine training -10 to 12 years old vineyards GRAPES: 50% Aragonez (Tempranillo), 50% Touriga Nacional DESCRIPTION: Pale Pink Color, Fresh, Tropical Fruits and Red Berries. Intense and fresh palate with nice mineral WINEMAKING Grapes were harvested by hand a few days before the ripeness of each parcel and variety. After de-stemming the grapes were submitted to a cold shock to make possible to macerate enough time to get the correct color and aroma concentration. Grapes were pressed under vacuum and fermented with selected yeasts under a controlled temperature of 18ºC. During the 3 month ageing in stainless steel vats an weekly battonage was made. Very ripe red and black fruits aroma integrated with spicy and balmy notes. Well-balanced, round, rich taste of fruits and spices, smooth tannins. WINEMAKING Grapes were harvested by machine during the night in the perfect ripeness of each parcel and variety. After de-stemming the grapes were submitted to a cold shock to make possible to macerate 48 h before alcoholic fermentation. Fermentation was made in stainless steel vats with controlled temperature, 22ºC on the first half od fermentation and 28ºC on the second half. Once finished the alcoholic fermentation the wine was in contact with the skins between 5 and 10 days. After de-stemming the grapes were submitted to a cold shock to make possible to macerate 48 h before alcoholic fermentation. Fermentation was made in stainless steel ‘’lagares’’ with controlled temperature and mechanic ‘’piegage’’’. Once finished the alcoholic fermentation the wine was in contact with the skins during one week. Grapes were harvested by machine during the night in the perfect ripeness of each parcel and variety. After de-stemming the grapes were submitted to a cold shock to make possible to macerate 48 h before alcoholic fermentation. After de-stemming the grapes were submitted to a cold shock to make possible to macerate 48 h before alcoholic fermentation. Fermentation was made in stainless steel ‘’lagares’’ with controlled temperature and mechanic ‘’piegage’’’. Once finished the alcoholic fermentation the wine was in contact with the skins during one week. Malolatic was made in French oak barrels. This wine was aged for 18 months in French new (50%) and used barrels (50%). Silky tannins, medium body. Nice freshness and mineral. WINEMAKING The Art.Terra emerged out of a continuous search for a maximum expression of a terroir. Grapes were hand harvested a few days before ripeness. Partially de-stemmed, the three grape varieties had co-fermented in stainless steel ‘’lagares’’ with mechanic ‘’piegage’’. Fermentation was made by indigenous yeasts and without temperature control. The grapes were pressed after 5 days of fermentation. Great texture, fine tannins, soft and pleasant. WINEMAKING The Art.Terra emerged out of a continuous search for a maximum expression of a terroir. Grapes were hand harvested in the perfect ripeness of each parcel and variety. Partially de-stemmed, the three grape varieties had co-fermented in old clay Amphoras. Fermentation was made by indigenous yeasts and without temperature control. After fermentation the wine was in contact with the skins for 60 days (until St. Martins day). The wine had aged, sur lie, for 3 months in small clay Amphoras. IMPORTER | MARKETER | DISTRIBUTOR São Miguel do Sul White 2015 ORIGIN: Alentejo – 30% from own vineyards 70% from contracted vineyards VINEYARDS: All the contracted vineyards are located at the North of Alentejo around Serra d’Ossa and followed by our viticulture team during all the season. GRAPES: 50% Antão Vaz, 30% Encruzado, 15% Viognier and 5% Arinto DESCRIPTION: Yellow citrus color with greenish hints, aroma of tropical fruits, mineral and floral notes, strong personality, intense and full with good acidity. WINEMAKING Grapes were harvested by machine during the night a few days before the ripeness, to preserve the acidity and aromas. After de-stemming the grapes were submitted to a cold shock to make possible to macerate 8 h before press. Grapes were pressed under vacuum and fermented in stainless steel tanks with a controlled temperature of 17ºC. The wine was aged ‘’sur lies’’ in stainless steel vats during 3 months. IMPORTER | MARKETER | DISTRIBUTOR São Miguel do Sul Red 2015 ORIGIN: Alentejo – 60% from own vineyards 40% from contracted vineyards VINEYARDS: All the contracted vineyards are located at the North of Alentejo around Serra d’Ossa and followed by our viticulture team during all the season. GRAPES: 50% Aragonez, 30% Alicante Bouschet, 15% Trincadeira and 5% Cabernet Sauvignon DESCRIPTION: Ruby color. Intense aroma of red and black forest fruits, combined with toasted notes. Smooth tannins, nice acidity, very juicy and easy drinking wine. WINEMAKING Grapes were harvested by machine during the night on the correct ripeness of each parcel and variety. After de-stemming the grapes were submitted to a cold shock to make possible to macerate 48 h before alcoholic fermentation. Fermentation was made in stainless steel vats with controlled temperature, 25ºC. Malolatic was made in stainless still vats with French oak staves.
