SAUMUR ROSE 2016 PRODUCTION TASTING VINIFICATION TO ACCOMPANY Grape variety : 100% Cabernet franc Soil : Clay limestone Situation : Hillside Area : 1 hectare - Vines supported on wires. Permanent grass cover; 50% perennial tufted fescue grasses Yield : 40 hl/ha TASTING Very pale salmon pink colour with delicate silvery grey highlights. The initial bouquet is very alluring – scents of little red fruits (blackcurrants, wild strawberries) then one discovers great freshness and fine aromatic complexity, but especially the citrus of grapefruit before an amylic peak from the fermentation at low temperatures. The palate is a reflection of the bouquet, very delicate, a beautiful honesty with great subtlety, then a long lively finale…. and then, a pleasing peak of freshness Jean-Michel MONNIER – Œnologue VINIFICATION The Cabernet franc grapes were harvested on 15th October 2016 at beautiful maturity on the plot at Commanderies. The harvest has been completely destalked, then direct pressing in order to have the lightest possible outcome. A slight settling, then fermentation at low temperatures allowed the structure to improve and best enhance the quality potential. The short ageing has been adapted to enhance the freshness of this wine with a bottling at the end of January 2017. Alcohol: 13.29° - Acidity: 4.20 – Residual sugars 0.5g TO ACCOMPANY This fruity wine can be enjoyed with many dishes: Salads (eel from the Loire, tabbouleh with mint salad, fresh Saumur mushrooms with lemon chive , salad, crabmeat...) Grilled fish (mackerel, salmon, sardines., whitebait..) Pizzas, and other specialties of Southern Europe (fresh pasta…) Grilled white meats, kebabs ... or poultry in a sauce SERVE : 8-9 ° To consume now or within 1 to 2 years.
