Energy Efficiency in the Restaurant Industry Restaurant Energy Consumption Energy Consumption Restaurant – Nationwide Restaurants spend about $6.4 billion per year on energy. Restaurants account for about 8% of all the commercial sector energy consumption. Restaurants spend an average of $2.90 per square foot per year on electricity and about $.85 per square foot per year on natural gas. 2% to 13% of the total operating costs are spent on energy.

Energy Efficiency in the Restaurant Industry Profit Margin versus Energy Costs Profit Margins average between 4% to 7%. Reducing energy cost by 20% can increase overall profit margins by 1% = an improvement of 14% to 25% (based on increase in overall profit margin 4% to 7%).

Energy Efficiency in the Restaurant Industry Quick Fixes for Restaurant Energy Savings Turning off lights, ventilation fans, and equipment when not in use can save money! An energy management system or occupancy sensors, especially in walk-in coolers and other storage areas, can be installed to turn off or turn down equipment automatically. A less costly alternative is to simply inform your staff about being conscious of energy use. Low flow water faucets in guest restrooms use less water. Only use the hood fans when cooking. Each unit of exhausted air is made up with new air that needs heating or cooling – this increases energy costs.

Summer: maintain 75 degrees in kitchen and dinning areas. Winter: maintain 70 degrees in kitchen and dining areas. Turn down temperature settings for HVAC equipment just before closing each night (programmable thermostats do this automatically). Summer: turn A/C off Winter: turn A/C down to 55 degrees

Be sure refrigeration units are set at optimal operating temperatures: No cooler than 37 degrees for refrigeration units. No cooler than 0 degrees for freezers.

Refrigerators Inspect refrigerator and freezer doors – poorly maintained refrigerator doors and gaskets can leak cool air which makes the equipment run longer. Make sure automatic door closers are working well and strip curtains are not damaged. Clean condenser coils annually. Dirty coils can increase energy use by 20%.

Energy Efficiency in the Restaurant Industry Quick Fixes for Restaurant Energy Savings Repair and Maintenance Check HVAC (Heating, Ventilation, Air Conditioning) Restaurant owners and operators will get some of their biggest payoffs by maintenance and repair of air conditioning, space heating, and ventilation systems. AC Economizers AC economizers use automatic dampers. An economizer damper draws in cool air for FREE cooling. If the damper is stuck open, it can increase HVAC costs by allowing hot air to enter in during the cooling season and cold air to enter in during the heating season.

Energy Efficiency in the Restaurant Industry Quick Fixes for Restaurant Energy Savings Repair and Maintenance Check HVAC AC filters should be changed monthly. Use good quality “pleated” filters rated MERV-7 or higher. The purpose is to keep the cooling coil and ductwork clean. AC condenser coils and cooling coils should be cleaned professionally on an annual basis. Dirty coils can increase energy use by 20%. Hot water Fix dripping faucets.

Energy Efficiency in the Restaurant Industry Quick Fixes for Restaurant Energy Savings Kitchen Measures Cooking equipment, coolers, and dishwashers are energy hogs in a restaurant. High-efficiency cooking equipment can be 15 to 30 percent more energy efficient. Examples of this equipment would be: Induction cookware. Lightwave ovens. Variable Flow Exhaust Hoods - are intelligent, variable speed hood controller systems that can significantly reduce energy costs in commercial kitchens. Sensors in these hoods determine how much ventilation is needed and will activate the fan at the proper speed.

Energy Efficiency in the Restaurant Industry Quick Fixes for Restaurant Energy Savings Kitchen Measures Evaporator fan controllers in coolers. Nearly all walk-in coolers have forced circulation evaporators that contain motorized propeller fans. These fans run continuously although the airflow that is needed is only necessary 50 percent of the time. Inexpensive controllers are available that slow these fans when full cooling capabilities are not needed.

Energy Efficiency in the Restaurant Industry Quick Fixes for Restaurant Energy Savings Lighting Measures Switching from regular light bulbs to CFL’s (compact fluorescent lamps) can use 1/3 of the energy and last five times longer than conventional incandescent bulbs. Install T-8 lamps and electronic ballasts. Replacing T-12 lamps can save up to 35 per cent on energy savings. Using occupancy sensors can increase savings. Rebates available from Colorado Springs Utilities!

Exterior signs, and Menu boards with LED signs will use and can last up to ten years. Parking Lots Install timers or photo cells to turn off parking lot lights during daylight hours.

Energy Efficiency in the Restaurant Industry Some larger energy saving remedies High efficiency cooking equipment. U.L. listed hoods, that use less exhaust and make-up air will save energy. Less make-up air means less energy. Replace electric water heater with gas water heater – gas cost less to heat with.

Energy Efficiency in the Restaurant Industry Some larger energy saving remedies Replace low efficiency HVAC system with high efficiency A/C with economizer. Insist on EER-13 or better equipment. Locate ice machine and walk-in cooler/freezer condensing units outdoors. They add a lot of heat to the kitchen, adding to the HVAC cooling load.
