How to make Peanut Butter Pinwheels Step-by-step instructions to make a divine , decadent candy for gifts, holidays or anytime you want something sweet!

A little history: Cooking and preparing candy and confections for friends and family during the holidays is something that I do every year. This candy is very easy to make and is always a hit! It is rich and decadent and a sure fix for those with a sweet tooth. I only make it during the holidays because you never can just eat one piece!

Ingredients 4 oz butter (unsalted) 4 oz cream cheese 1 tsp. of vanilla flavoring 1 6oz. can of evaporated milk 1 2# bag of 10X Confectioner's Sugar 1 jar of peanut butter (will not need the entire jar)

Tools for best preparation A heavy duty mixer (not required but recommended) A large mixing bowl A rubber spatula A knife or cake spatula to spread the peanut butter Wax paper Aluminum foil

Step 1 Allow the cream cheese and butter to reach room temperature. Place in the mixing bowl and cream together at a low speed. Be sure to scrape the sides of the bowl with a spatula and make sure both are completely smooth and combined.

Step 2 Turn the mixer on a low speed and add a small amount of evaporated milk. Add the vanilla. Add confectioner's sugar and alternate small bits of the evaporated milk. You won’t need too much milk so be careful not to add to much initially! Too much milk melts the sugar and requires more. Keep adding confectioner's sugar until you have a big ball of fondant. The fondant will be a dough like consistency. Note: If using a mixer you will have to stop at some point and finish the process by kneading confectioner’s sugar into the ball and use your hands to complete the process. You want to have a firm fondant that can be rolled out like cookie dough.

Step 3 Measure out a sheet of wax paper approximately 18" long and place on a flat surface. Dust the wax paper with confectioner's sugar to keep the fondant from sticking. Take the fondant out of the bowl and place on the wax paper. Here is where you will need to use your hands to knead a little more confectioner’s sugar into the fondant to get the consistency of a stiff dough. Divide the fondant into 2 sections. Make the fondant ahead and keep cold until you are ready to roll it out!

Step 4 Dust the rolling pin with a little confectioner’s sugar to keep it from sticking! Roll one of your fondant sections out into a long oval shape approximately 1/4" thick that can be rolled up. The neater you make your oval the more compact your rolled candy will look when rolled up. Spread peanut butter over the entire surface of the rolled out fondant.

Step 5 Starting at one side of the oval, lift up the wax paper and fold one side long side in on itself. Continue rolling the fondant spread with peanut butter until you have a long roll like a log shape. You can trim the ends at this point to even it out (I usually do to taste test!). Get a fresh sheet of wax paper to wrap up your candy roll; twist the ends. Wrap the candy roll (wrapped in wax paper) in foil and place in the freezer for it to get firm. The foil is also a nice way to wrap it for gifts! Just add a ribbon!

Step 6 Give it as a gift! Take it to a party to share with friends! This is a very rich candy that is great for those with a sweet tooth and can convert even the most diehard that avoid sweets! To serve it up unwrap, slice and enjoy!!!
