How to make panellets
First you wash your hands
Wash a small, sweet potato, prick it with a skewer and bake it in the oven for 8 minutes turning it once.
In the meantime put the ground almond in a bowl and add the sugar.
Work the mixture of almonds, sugar and sweet potato until you get a smooth dough.
Also adding lemon rind
Cover the dough in cling film and leave it in the fridge from 4 hours to overnight
Roll the dough in portions and cut them
Shape them and cover them with: pine nuts, coconut, flaked almonds, jam… whatever you like best
Add some chocolate powder to the dough and mix it properly if that’s your favourite
Place them on the oven tray and coat them with egg to give them a final golden touch.
Bake them in the oven at 200 degrees for 8 to 10 minutes until they are golden.
