Objectives of the project : TERRALIA INRA SQPOV Impacts of varieties, harvest conditions on reactivity during processing and final product quality Context In food industry : Few adaptions of process parameters to quality variations of fruit raw material. Objectives of the project : To define new relevant varity criteria for the processing industry To adapt processes to different quality of raw material To answer to specific quality specifications of food industry

TERRALIA INRA SQPOV Impacts of varieties, harvest conditions on reactivity during processing and final product quality WP : to develop a database on fruit reactivity To develop knowledge and know-how for stabilizing and valuing the nutritional and organoleptic asset of fruits from short-circuit and recognized origin To develop a predictive model and determined the best parameters WP2 : to develop a mobile equipement to process fruits in the fields To develop instrumented processing machines dedicated to the first processing of fruit, and allowing to adapt processing route to raw material properties. Conception of an “in-field” processing machine, aiming at stabilizing fruits quality as early as possible after harvest, and produce high value PAI. WP3 : technico-economical analysis of the model Study and find the best business models dedicated to the use of the machine and the value chaine that can be created around high quality PAI. Measure of the willing to pay of consumers (based on sensory/economic coupled studies) WP4 : waste management in fields
