Potato stuffed Bolani Recipe

Backround about Bolani Bolani is a traditional and popular dish in Afghanistan. It is a flatbread stuffed and fried with potato and leek. Bolani is always serve warm and with greek yogurt. Bolani also contains proteins, fiber, and vitamins because we put different types of vegetables. Most of times Bolani is good for special occasions like weddings, parties, and etc.This type of food are also good for vegans. Another thing I want to mention is that you can add any other vegetables that you want besides the one I made. Bolani has some contreversial issues. It contains fat and calories. When you fry it, all the oil sucks into the dough and this will make it oily but it's worth it because you don't eat this kind of food everyday.

Ingridients Dough Ingridients flour - 900ml salt -10ml yeast - 5ml water room temperature- 450ml

Ingridients Filling Ingridients 3 medium potatoes cilantro - 4 oz scallions - 2 oz onion - 1 garlic - 2 cloves salt - 10ml ground black pepper - 5ml coriander powder - 7ml

Steps for making the Dough In a large bowl add flour, salt and yeast and then mix gradually while mixing add in water until dough forms a ball. if a dough is too dry then add more water. knead dough for 10 minutes after cover it with a cloth and let it rest for 2 hours

Steps for Fillings scrub potatoes clean, then place it in the pot cover by 2 inces water. bring to a boil over high heat after boiling for like 25-30 minutes, check to see if the potatoes are done by pocking them with a skewer. The skewer should easily pierce through the center of the potato. once the potatoes are done, drain them and let it sit for like 10-15 minutes peel and quarter the potatoes and then mash it in a bowl. Try it to be as smoth as possible. then in a pan add some oil, then add the onions and cook it unntill its a brownish color. after chop the cilantro, scallions and then add in to the pan and mix it all then add some salt, black pepper, coriander powder, garlic and mix it again. place everything in the bowl of the potatoes and mix it all again.

Steps for cooking Bolani take a portion of the dough(about size of a small apple) and roll it into a smooth ball. spread some flour onto your surface, and roll the ball with a rolling pin. the dough should be as thin as a tortilla and have a 10-12 inch diameter. the thinner, the better! then spread little of the filling on one half of the dough, leaving about 1/4 inch borded around the rim fold the dough in half over the filling and press to seal. if it is necessary, continue pressinng and flattening Bolani to remove any excess air inside the pocket. then heat 1ml olive oil in a pan. The oil should be hot enough that the bolani sizzles when placed in the pan. Brown the Bolani, two at the time,until golden and crispy on both sides. This will only take a couple of minutes on each side place the cook Bolani on a plate as they finish. Add more oil to your pan as needed while you cook the rest. serve warm with a simple greek yogurt

Ingridients For Frying olive oil- 2ml Yogurt sauce plain greek yogurt - 225ml garlic - 1 clove salt - 2ml

Personal opinion I love Bolani. It is one of my favorite dish. I usually don't make it so often because most of the time I make Bolani for special occassions but when I make it everybody loves it and won't stop eating it because it is that delicious. I recommend you guys to try Bolani. If you can't make it at home you can go and try it in any Afghan restaurants. I'm sure you will love it.
