Pancake Poppers INGREDIENTS ¾ cups all-purpose flour ½ cups milk 1 ¾ teaspoons baking powder 1 egg ½ tsp salt 2 tbsp butter, melted ½ tablespoon white sugar DIRECTIONS Preheat oven 350 and spray mini-muffin pan thoroughly In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth. Do not over mix. 4. Spoon about 1/4 cup mixture into muffin pan. 5. Top with a few chocolate chips or cinnamon sugar 6. Bake for 8-10 minutes until toothpick inserted comes out clean.
