Cheese & Chilli Scones Ingredients: 225g plain flour 50g butter 1 ½ teaspoons baking powder 125g mature cheese, grated 1tbsp grated parmesan 1 generous pinch of chilli powder 1 generous pinch of paprika Handful of chives Few tablespoons milk Method: Heat the oven to 200 degrees Mix together the flour and baking powder in a bowl Cut the butter into chunks and rub into the flour until it resembles fine breadcrumbs Stir in the grated cheese, parmesan, chilli powder and paprika Finely snip the chives into the mixture Add the milk a tablespoon at a time until you have a soft dough Pat out gently to 2cm thickness and cut into rounds Place on a greased baking tray and brush with a little milk Bake for 10-15 minutes until golden brown.
