Bread Notes

Quick Breads leavened by agents that allow immediate baking Muffin method- lightly mixing liquid ingredients into dry ingredients creates a product with a slightly coarse yet tender texture End up with air spaces inside and peaks on top Muffins are lightly browned with rounded, pebbly tops Loaf breads are lightly browned and have pulled away slightly from the sides of the pan Pancakes are ready to turn when the edges look dry and the bubbles on top start to break

Quick Breads Biscuit Method- makes one basic type of bread- the biscuit plus its egg- enriched cousins, scones and shortcakes Uses solid fat with the dry ingredients before the liquids are added Use a higher ratio of flour to liquid Rolled Biscuits- always mixed by the biscuit method. The dough is prepared, then rolled out to an even thickness and cut to biscuit size Kneading- work dough with the hands to combine ingredients and develop gluten This dough should not stick to the sides of the bowl after being pushed into a ball

Quick Breads Drop biscuits- little more liquid in proportion to flour compared to rolled biscuits Holds shape when mounded but doesn’t clean the sides of the bowl Can be cooked on cookie sheet, muffin tins, on top of a casserole to make a crust, or onto fruit filling to make a cobbler Both rolled and drop biscuits double in size

Yeast bread Leavened with yeast, dough must be well kneaded and allowed to rise before baking Fermentation- when yeast and enzymes it contains break down carbohydrates to produce alcohols and carbon dioxide gas for leavening Pizza crust, pita bread, hard rolls, soft pretzels, puffy pastries and chewy bagels

Yeast Breads Basic white bread- made only with all purpose flour, yeast, salt , sugar, fat, and water or milk Batter bread- made like basic white bread but with more liquid. Batter is beaten not kneaded Sweet white bread- basic white bread plus butter, eggs, extra sugar, and sometimes nuts and fruits Whole-grain bread- made with whole grain flour, which replaces part or all of the all-purpose flour Sourdough bread- leavened with sourdough starter. This well- fermented mixture of yeast, water, and flour gives a tangy flavor and chewy texture.

Types of Yeast Bread Conventional method- the yeast is first dissolved in warm water to activate growth Quick-mix method- combines dry yeast with dry ingredients. The liquids must be warmer because the dry ingredients absorb some of the heat
