Receive Thaw Preheat Add Product Heat Hold Clean Mark cases to be stored frozen with date received. Frozen product can be kept for up to 6 months from date of manufacture. Store unopened cases of product in cooler for up to 21 days. Mark any opened packages with a use-be date of 7 days from today’s date. Thaw Thaw frozen hot dogs in a cooler for 72 hrs. (3 days) prior to placing on roller grill. Keep a three day supply of thawed hot dogs in the cooler at all times Preheat Preheat the grill for 15 min. on a medium –high setting of 7-8 to a grill temp. of 150-170 degrees F. Add Product Use clean gloves or plastic tongs to add and remove product from grill. Replace products every 4 hours and adjust product mix throughout the day. Heat Heat product to an internal temp of 165 F according to package instructions. Approx. cook time is 25-30 minutes Insert a probe thermometer into one end of the hot dog to check the internal temperature. Sanitize thermometer before and after each use. Hold When product has reached an internal temperature of 165 F, turn dial to warm and note time product was place on the grill. Keep internal temp. above 140F. Move the first product to the front before adding more product (first in, first served). Discard any product not sold after 4 hours. Clean Check drip tray 3 times daily and wash with warm, soapy water. Line tray with foil for easier clean up. Wipe spills around grill area with a damp cloth as they occur. Do not use sanitizing solutions, oven cleaners, abrasive materials, chloride cleansers or phosphate cleansers on grill. At end of day, discard any unused product and remove the sneeze guard. Turn grill on high for 3-8 minutes to loosen any drippings between the rollers. Turn off heat, but keep rollers turning and wipe with a damp cloth. (Careful—grill will be hot!) Clean with an approved detergent, rinse and dry. Clean condiment containers and sneeze guard with warm, soapy water and rinse thoroughly. Wipe bun area with a clean, wet cloth and let dry.
