Other Spirits ABSINTHE Invented by Dr. Pierre Ordinaire, French Physician Highly alcoholic and flavoured with wormwood and anise. Alcoholic range of 50–75 per cent abv. Traditionally, it is green in colour but colourless variety is also available. The combination of wormwood and high alcohol was considered to be very harmful to mental health. As a result, by1915 absinthe had been banned in the USA and in most European countries.

Absinthe A revival of absinthe commenced in the 1990s, when countries of the European Union began to recall its production for commercial purpose. The USA resumed its commercial production in 2007. Traditionally, absinthe is prepared by pouring ice cold water over a sugar cube placed on a specially designed perforated spoon kept on the glass filled with a shot of absinthe. During this process, when the water hits absinthe, non-soluble components of flavouring ingredients turn the drink milky white.

Steps in making Absinthe The steps in making absinthe are as follows 1. Pour small quantity of absinthe in the glass 2. Place the sugar in the absinthe spoon (spoon with perforation) 3. Add chilled water 4. Absinthe (turned white) is ready to serve

Pastis Pastis is a generic name given to spirits that are aniseed and liquorice flavoured. When water is added, they turn milky. Pastis does not contain wormwood. Alcohol range is 45–50 % abv. Ricard and Pernod are the famous brands of pastis in France. Following are the pastis from various countries Ojen : Spain Raki : Turkey, Anezone : Italy Ouzo : From Greece

Akvavit ( Aquavit/ Schnapps) It is a spirit distilled from grain or potatoes and flavoured with caraway and cumin. It is served ice cold in a small glass and taken straight in one gulp. It is native to Scandinavian countries (Sweden, Denmark, and Norway). It is also known as schnapps in Germany, schnaps in Denmark, and snaps in Norway and Sweden. It is traditionally served with Scandinavian smorgasbord

Points to remember Spirits are distilled drinks made from any fermentable ingredients. Almost every country has its own local spirit . These spirits may not be available in most bars as their demand varies according to the local drinking practices and popularity of a drink, unlike the spirits such as whisky, rum, gin, vodka, brandy, and tequila which have global market.
