School lunch in Uddevalla Food and Environment

Meal service in Uddevalla We cook and serve about 15 000 meals a day. 52 kitchens and 160 employees From daycare to elderly care with school in between  Since middle 70´s we serve free school lunch in all municipalities in Sweden. 1997 it also became a legal requirement Most dishes are prepared from raw material in place at the school kitchen Unit heads and cooks set the menus together, according to the meal model made by the National Food Agency

Food impact on environment Ca 25% of climate emissions from swedish households comes from food and its way thrugh the foodchain

How does it happen? Greenhousegases are let out: When vehicles and machines are used From ruminant animals that belch and fart  When culturing, especially rice In animal breeding When fertilizing Etc.

But we have to eat… How shall we act???

How we act in the kitchen Meatfree days or less amount meat in the dishes Choose meat from natural grazing animals from the local area when possible We serve eco-labeled fish (MSC) - and more beans and lentils Choose vegetables in season

… how we act… Select vegatables with good durability as cabbage and rootvegetables We buy ecological food when possible Serv moore potatoes, swedish pasta or different food grain instead of rice Try to cook enough but not to much food Take care of the leftovers in a safe and hygenical way, and serve it later Use good recepies for tasty meals!

Food waste = food and beverage that are thrown away unnecessarily 20% waste in school (plate+kitchen) Platewaste is more common among older students Food that´s not eaten up, costing the climate most
