Introduction In recent years, NGOs have become increasingly involved in supplying meals to schools as a part of government’s midday meal scheme. Akshaya Patra is the largest of these, serving wholesome food to over 1.6 million children from 13,839 schools across 12 states in India. The Akshaya Patra Foundation is a not-for-profit organisation headquartered in Bengaluru, India started in 2000. This organisation strives to fight issues like hunger and malnutrition in India, by implementing the Mid-Day Meal Scheme in the government schools and government-aided schools.
The Main objective of Akshaya Patra is to The humble beginnings of the Foundation started with serving of the mid-day meals to 1500 children across five Government schools in Bengaluru. The programme embraced the vision that – “No child in India shall be deprived of education because of hunger.” The Mission of Akshaya Patra is to - TO FEED 5 MILLION CHILDREN BY 2020. The Main objective of Akshaya Patra is to Eliminating classroom hunger. Increasing school enrolment. Increasing school attendance. Improving socialisation among castes. Addressing malnutrition, and Women empowerment.
Service – MID-DAY MEAL To improve primary education and counter classroom hunger the Government of India has developed two of the most significant programmes 1. Sarva Shiksha Abhiyan (SSA) 2. Mid-Day Meal Scheme (MDMS) The Mid-Day Meal Scheme focuses on providing free lunch at all Government schools in order to enhance enrolment, retention and attendance among children and also simultaneously to improve their nutritional levels. Akshaya Patra implements the Mid- Day Meal programme in 32 locations of 12 states of India. Each day the Foundation feeds 1.6 million children covering more than 13,839 Government schools. The Akshaya Patra Kitchen Infrastructure will give an overview of its compliance to Food Safety and Quality Standards while preparing the meals. 12 centralised kitchens of the Foundation are ISO 22000:2005 certified and the remaining are in the process of getting certification.
Kitchen - AKSHAYA PATRA Today, Akshaya Patra has kitchens in 32 locations spread across 12 states in India, a result of the successful partnership with the Government of India, various State Governments and generous supporters. Its state-of-the-art kitchens have become a subject of study and they attract curious visitors from around the world. Akshaya Patra kitchen run mainly on two methods of food preparation that is centralized and decentralized method of kitchen. Centralised kitchens Are large kitchen units that have the capacity to typically cook up to 100,000 meals. These kitchens serve a set of schools located around the unit. They are automated and thus ensure hygiene during the cooking processes.
Kitchen - AKSHAYA PATRA Decentralised kitchen On the other hand, in locations where factors like difficult geographical terrain and improper road connectivity do not support the construction of large infrastructure, the decentralised kitchen format is the ideal solution. The kitchens are run by the women Self-Help Groups (SHGs) under the guidance and supervision of Akshaya Patra’s kitchen process and operations module. Decentralized Kitchen Centralized Kitchen
Quality Standards Quality and Food Safety are the primary ingredients at each of the Akshaya Patra kitchens. To maintain the quality of the meal, standardisation of recipes across all locations has been undertaken. To improve quality standards, advance projects like Kaizen and 5S have been started in different locations. Employee Health and Safety activities are conducted to further increase hygiene standards and improve safety and health. The Akshaya Patra has adopted several quality measures from procurement of raw materials to Post Delivery Process of food. Akshaya Patra Kitchens have adopted Six Sigma Methodologies Quality Assurance during procurement of raw materials Storage, Handling, Preservation of raw materials Quality and Safety during cooking Food Packing and Transportation Delivery Post Delivery Process Continual Improvement methods
Six Sigma methodologies are: 1.Quality Assurance during procurement of raw materials : Quality Control process ensures that raw materials are accepted only after thorough Quality Inspection in order to meet all the requirements of our Raw Material Specifications. 2. Storage, Handling, Preservation of raw materials : Fresh vegetables are procured on a daily basis. Rice is supplied by the Food Corporation of India (FCI). In order to ensure all the raw materials are fresh, all the kitchens follow the FIFO (First In First Out) and FEFO (First Expiry First Out) methods.
3. Quality and Safety during cooking : All the cooking equipment are sterilised using steam before the cooking process begins. The vessels used in the kitchens are made of stainless steel of 304 grade and is best for cooking and handling food. All the kitchens have well trained Cooks and Production. Critical Control Points (CCPs) like cooking temperature are checked and recorded at periodic intervals to ensure the right quality of the meal.
4. Food Packing and Transportation : The cooked food is packed in steam sterilized vessels and vehicles to deliver food. These vehicles use a puffed body to reduce the temperature loss and a honeycomb structure to hold the vessels upright and keep the freshness of the cooked meal intact till it is served to the children.
5. Delivery : --Once the food is prepared, it is packed into tight-lid stainless steel containers and loaded into custom-built vehicles that play on fixed routes to cater to the schools within a 50 km radius. --The vehicles supply meals for about 20 to 25 schools per vehicle and on their return trip pick up empty containers. --Methods like Logistic charting for route optimization, GPRS to track the delivery vehicles for safety and on-time delivery.
6. Post Delivery Process In order to consistently maintain the quality of the meal, we take feedbacks from schools on a daily basis while delivering the meal. We also circulate ‘Do’s and Don’ts’ pamphlets to all schools on a regular basis for creating awareness on food safety and hygiene while serving the mid-day meals.
Awards and Recognitions Akshaya Patra has been recipient of quite a few significant national and international awards. Recent awards Nikkei Asia Prize 2016 in the ‘Economic and Business Innovation’ category Platinum award at the AVA Digital Awards 2016 competition for Giving Every Dream A Chance Video Ranked 58th out of the 100 Best Annual Reports of 2014, in the ARC 100 Gallery by MerComm Inc. Gold under the 'Foundation' category of Non-Traditional Annual Reports in the ARC Recognitions Akshaya Patra has been nominated to be the Member of National Steering-cum- Monitoring Committee (NSMC) for Mid-Day Meal Programme Akshaya Patra is the first NGO to have got enlisted in the ICAI Hall of Fame and it is the third entry across all industries The Foundation is ranked 23rd among Top 100 NGOs by The Global Journal in its 2013 edition It is featured as one of the 8 game changers in the inaugural issue of Innowin- India’s first magazine dedicated to innovation Limca Book of Records and India Book of Records recognises Akshaya Patra as running The world's largest school meal programme A documentary on Akshaya Patra was featured on National Television-Doordarshan.

Conclusion The visit provided in depth understanding in various processes undertaken at Akshaya Patra in preparing various items. The unique aspect of this intervention is that the programme has been able to take a massive initiative to scale, while keeping its high quality and delivery standards integral.
