What is the difference between sugars, starches and cellulose? Sugars are often referred to as simple carbohydrates, basic sugar that gives you a sugar rush. Found in chocolate and candy bars, soft drinks, doughnuts and sweets. Starches are often referred to as complex carbohydrates, don’t give you the rush but lasts longer. Found in rice, potatoes, pasta and fruits. CONCEPT OF GLYCEMIC INDEX.
