Mexican Corn Muffins Ingredients: 1 package yellow corn muffin mix ½ cup milk ½ cup drained whole kernel corn 2 tablespoons drained chopped green chilies 1/8 tsp cayenne pepper Directions: Preheat oven to 400 Line 6 muffin cups with paper liners Mix muffin mix and milk. Stir until just moistened Add drained corn, peppers, and chilies. Spoon even amounts into muffin cups. Bake 15-20 minutes until golden brown Remove from muffin cups Makes 6 muffins
