Embryology Health Risks Dr. Ken Koelkebeck Extension Poultry Specialist University of Illinois Extension

E. coli & Salmonella All animals carry E. coli and some Salmonella in intestines Small % of eggs (1 in 20,000) may contain Salmonella enteritidis (SE) Fertile eggs used in project come from flocks that are routinely tested for any presence of SE

E. coli & Salmonella Most Salmonella infection cases come from food-borne sources (improper food handling) Bottom Line: Teach good hygiene (sanitation – wash hands) to reduce very small risk of Salmonella or E. coli infections

National Status 232 premises positive for HPAI 211 commercial 21 backyard Commercial premises MN-109; WI – 9; MO – 2; IA – 71; NE – 5 ND – 2; SD – 10; CA – 2; AR - 1

Cost of HPAI in Iowa Iowa Farm Bureau – above 1.2 billion !!! to the economy of Iowa Total includes losses associated with depletion of flocks and indirect effects on economy

Avian Influenza (AI) (Bird Flu) Chicks are never born with AI. Virus will not transmit from hen to chick via egg Fertile eggs used in classroom come from flocks which are closely monitored and routinely tested AI (Bird Flu) (H5N1) found in Asia have never been found in North America

Avian Influenza (AI) (Bird Flu) Strains of Bird Flu crossing over to humans in Asia are different form of AI People who died were in direct contact with infected birds They lived with birds and contracted disease by breathing in the virus

Avian Influenza (AI) (Bird Flu) Web site information: http://poultryextension.psu.edu/AI%20 Info.html Finally, teachers remember that the children should ALWAYS wash their hands before and after handling the eggs and chicks
