ILC Objective #1 Where are the ingredients sourced from and how does this create a unique terroir in their products? Cacao beans: Madagascar & Tanzania Cocoa butter: West Africa Most other ingredients are bought whole sale Milk powder is from Iceland. (co-op) Coffee beans are from Reykjavik roasters. Jesus maria farm Only certified organic is cacao beans. Salt is local….saltwerks Terroir -> Icelandic milk powder very sweet. Terroir in milk chocolates. Darks show the terroir of their bean origins. Terroir as in methodology though….as in making the chocolate.
ILC Objective #2 Standard price point. 500 isk. Stores flip for 1300isk (approx.) No advertising…try to create experiences for customers. No design rules. Only creates products they like. “timing” and “x-factor” Never started in the red. No business plan for first 6 months. Local distribution…and global Staff treatment…Friday lunches…briefings What business models and practices are used at OmNom Chocolate Factory?
ILC Objective #3 Roasting (4 parts) Winnowing Grinding Conching Storing Tempering (make unstable fats stable.cool down and movement) Pour into molds….cool….wrap….package Sprinkle almonds on. Adding extra ingredients What is the production process like and are any special techniques utilized?

Making My Own Chocolate Restless in Reykjavik 65% Tanzania With Bananas & Nibs (or Sea Salted Almonds)
Conch for 24-48 hours Measure the ingredients Cocoa butter, sugar, cocoa mass. 65% Conch cocoa butter and mass. Add sugar later Measure the ingredients
Tempering by hand Pour into Molds & Chill Take temp, pour out on table, move around, take temp, move, take temp, put into bowl, reheat, take temp, repeat until you get the right temp. then pour into molds and let cool for an hour in fridge. Tempering by hand
