Note which one this is on your log book Delete this slide before you upload the powerpoint – this is just to help give you ideas For this section you need to demonstrate a wide range of different skills in cookery by producing at least one dish a week. You will need to include the recipes and photographs of the product as evidence and also bring in samples for your assessor to taste! Use the list provided to ensure you are meeting the requirements by producing a range of different dishes. There are 16 ideas here  You need a selection of dishes and should show a range of different techniques (grilling, baking, frying, blending, roasting etc.) Soups Prepare a soup by blending together a range of ingredients Stews & Casseroles This must include a homemade sauce (not out of a jar) and be cooked in the oven Stir-fry Prepare fresh vegetables (and meat) in strips and shallow fry in oil with a sauce or seasoning Mexican Produce a dish involving tacos or tortillas Curry Prepare a curry sauce using curry paste and spices to a specific recipe (not out of a jar or packet) Italian Prepare a pasta-based dish or a risotto. You could even make your own garlic butter and serve a side of garlic bread Cake Make a family-sized sponge of your choice, decorated cup cakes or brownies Pie or pastries Make your own shortcrust or puff pastry and use this in a sweet or savoury dish Salad Prepare a salad and your own dressing; make a fruit salad Sunday Roast Roasted meat and fresh roast potatoes with a range of vegetables and gravy (not instant gravy!) Grilled meat or fish Make a dish that involves grilling Biscuits Make a batch of biscuits (cookies, shortbread etc.) Bread Make your own loaf, bread rolls, Naan bread or flatbread Fresh pasta Make your own pasta from scratch Dessert How about a mousse, cheesecake or torte? Fresh fish Buy a fish from a fishmonger and de-bone it yourself and use it in a dish of your choice Taste Test Bring in at least ONE sample for your assessor to try out!
