Vulcan Combi

Observations of Combi Users Menu items are not complex. Chefs/Operators typically use the combi unit as either a convection oven or as a steamer. Don’t understand “combi” mode. Experienced with Convection Ovens and Steamers If you didn’t know “combi” mode settings what mode would you choose for your own specialty chicken product? Simple to Operate!!!

Temperature Time Humidity Forget the Modes Operators don’t understand modes and often only use convection and steam in other combi’s. Using the three key variables for the foundation of everything we cook, we gave the operator exactly what they have been asking for: Temperature Time Humidity

ABC: Always Be Combi! Set Temperature Set Time COOK Intuitive Controls driven by a cooking algorithm that properly selects humidity level based on operator temperature selection. Combi performance with no confusing modes, elaborate programing or extensive training.

This takes the biggest operator complaint and barrier of learning how to use a combi and eliminates it. The innovative and intuitive combi controls are exclusive to Vulcan and allows for multiple benefits to the operator. The algorithm that ties temperature to humidity can be labeled as foundation for all cooking yet never understood by operators, or even displayed before. Now, when operators select a cooking temperature on the Vulcan Combi’s exclusive and patent pending controls, the machine automatically selects the correct humidity setting. This takes the biggest operator complaint and barrier of learning how to use a combi and eliminates it. There is now zero fear factor for operators and immediate combi results no matter the skill of the operator. If they can use a convection oven control with temperature and time, they can use the Vulcan ABC combi with ease resulting in faster cook times, better quality and complete versatility of a combi. Since confusing modes, symbols and layered touch screens have been eliminated, our machine’s controls require minimal training, if any, yet still achieves combi performance with unskilled operators.
