INTRODUCTION TO FOOD AND BEVERAGE MANAGEMENT HMGT 1102 Professor KRONDL

What are you going to learn? the arithmetic you should have learned in grade 4 how to tell the difference between apples and oranges and some other stuff

The Rules

No eating in class Food in the classroom creates a distraction, makes a mess and creates garbage. Please don’t make me single you out and ask you to dispose of your food. Drinks are OK but throw out your empty beverage containers. Maid service costs extra.

E-mail etiquette My email is: MKrondl@CityTech.Cuny.Edu You must use your city tech account to email me. Some of you will insist on sending me notes through your private e-mails and then be shocked when I don’t answer you.

E-mail Etiquette student@mail.citytech.cuny.edu

More about email Check your email regularly If there is some issues I will be contacting you early, while you can do something about it! If I write you a note that you are in danger of failing but you don’t see it you will probably fail

Email Help For help, contact the Student Computing Helpdesk in the Atrium Welcome Center 718.260.4900

Forwarding Email You can’t. Set up your smartphone so that you can send/receive from your city tech account Ask at the Atrium learning center for help if necessary.

Open Lab All course materials (assignments, PowerPoint presentations, reading assignments, take-home quizzes) will be posted on Open Lab within a day or two following the class under the files link In other words, “I was absent” is not an excuse for getting the work done

Free Stuff As a City Tech student you can get free access to the New York Times Ditto for Microsoft Office Contact the Atrium Student Center if you’re having problems accessing either

Two part foundation for food and beverage management

1. Culinary math accurate measurement portion controls recipe conversions product yields inventory methods

2. Procurement current market and procurement trends examine how food is sold and distributed an emphasis on product identification

Course Requirements/Assessment 10 % Math Homework assignments (2 @ 5 pts each) 20 % Culinary Math Examination 15 % Procurement & product identification quizzes (4 total) 5 % Smorgasburg reaction blog 5 % Trade publication summary-reaction paper 10 % Semester project (see syllabus) 5 % Anna Nurse culinary workshop memo 20 % Food Truck project 10 % Class participation 100 % TOTAL POINTS

Grades This is a class for tortoises not hares.

Grades If you do “most” of the assignments but not the overwhelming majority you will probably fail. Assignments delivered on time get the full grade, up to 1 week late I will deduct 50%. (In other words a grade of 80 will be worth 40 but that is still better than 0!)

Talk to me! I am happy to meet with you to assist you in any way I can. Please make an appointment with me if I can help you succeed. Right now you have an A. It’s up to you to keep it that way.
