Course Description MASTER CLASS CHEF Unit Code: 10TF2 This course introduces students to factors associated with designing and presenting food for use in a commercial setting. It encompasses issues relating to safety and hygiene and the properties and characteristics of various food groups. Production tasks incorporate a range of complex processes. The design process involves analysing a design brief, generating design options, selecting the best solutions, producing the selected design and evaluating the result.

Course Description CHEFS OF THE WORLD Unit Code: 10TF1 This course introduces students to modern Australian cuisine. Through the use of interesting and appealing ingredients students will develop an appreciation of foods from around the world. A study of the customs and traditions of several overseas countries is included in the unit. Emphasis is placed on researching, planning and preparing foods that are popular in modern Australian cuisine.

Course Description SPECIAL OCCASION FOODS Unit Code: 10TF3 This course introduces students to factors associated with the preparation and presentation of food to meet a specific need. A design folio shows design ideas, work plan and evaluation of production activities that students undertake relating to special occasions. Finally, students investigate the use of a selected food using the design process.

Extra activities/costs? Melbourne Excursions for each unit at a cost of $30.00 each. Food Tastings Guest Speakers and demonstrations For “Chefs of the World” there is an extra excursion to “Goldsmiths in the Bush” at Lakes Entrance. The cost is $10.00. Students require appropriately sized containers for each practical class.
