Uses of Enzymes in Industry

Learning Intentions I can state that enzymes can be used in industry to manufacture useful materials. I can explain why enzymes are important in fermentation in the brewing and distilling industry I can describe a range of other uses of enzymes in industry

Success Criteria I can carry out an experiment looking at yeast fermentation I can sequence the industrial processes involved in the distillation process of making whisky. I can carry out research into uses of enzymes in industry. I can communicate my finding to others in a structured way.

Revision Can you remember the anaerobic respiration equation for plants Glucose→ Ethanol + CO2 If yeast goes through anaerobic respiration this is called fermentation and the process produces the product alcohol

Brewing and Distilling Use classroom resources to find out about these important industries, which are very important for our area

Malting Find out why the enzyme amylase is very important in the malting process Starch is present in barley grains. This starch cannot be used by yeast as a food. First of all brewers must germinate the barley. Barley grains contain enzymes. Germination allows the enzymes in the barley to act on the starch If you have time test some barley grains

17 November 2018 Malting At this stage the temperature is carefully controlled to regulate germination of the grain. When germination begins, enzymes in the grain break down the starch into maltose. During the brewing process the maltose is converted into fermentable sugars. G Davidson

17 November 2018 Maltings Building G Davidson

Fermentation process Yeast used for the whisky industry are grown in fermenters in which conditions need to be carefully controlled. Technology is essential in monitoring these conditions What conditions do you think would need to be maintained to gain optimum growth. Complete the fermenter diagram.

17 November 2018 Simple Fermenters A fermenter is a vessel which can be used to manufacture a range of products in the presence or absence of oxygen. Yeast can be used to ferment sugars to produce many useful substances for man. G Davidson

Simple Fermenter 17 November 2018 G Davidson

Large Fermenters 17 November 2018 G Davidson

Whisky industry Record the stages of whisky production in your notes

Enzymes in Industry report Find out about the uses of enzymes in industry and write a brief report to meet the required success criteria
