Monkey Bread Minis Equipment: Cupcake Pan, tablespoon, teaspoon spoon, cutting board, ¼ dry measuring cup, pizza cutter, large Ziploc bag, glass prep bowl Ingredients: ¼ cup butter ¼ cup packed brown sugar ¼ cup white sugar 2 teaspoons cinnamon 7 Pillsbury Juniors biscuits Yield: 4 Mini Monkey Breads, 1 per person Directions: Pre-heat oven to 350°. Place butter in a medium sized glass prep bowl. Melt in microwave for 30 seconds. If not completely melted, microwave an additional 15 seconds. Add brown sugar to butter and mix well. Combine white sugar and cinnamon into baggie, close and shake to mix. Cut each biscuit into 6 equal pieces using a pizza cutter. Roll or pinch each little piece into a ball (don’t over do – it doesn’t have to be perfect) Place biscuit dough pieces into bag with cinnamon and sugar. Close the bag and shake the pieces until they are all coated with the mixture. Spray the cupcake pan with non-stick cooking spray. Spoon 1 tablespoon of brown sugar/butter mixture into the bottom of 4 cupcake spaces. Place 10 dough pieces into each space. Pressing lightly so they all fit. Bake for 14 minutes. Cool for 1 minute. Run a butter knife around the edges of each bread to loosen it. Use tongs place onto serving plates. Drizzle brown sugar mixture from cupcake pan over bread if desired. Serve warm.
