Determinants of Health These are major concerns in the US as we enter into the 21st century. These will be used to measure the health of the nation over the next 10 years. Notice that most of these indicators are not diseases- they are behaviors. Why is that? Science has come a long way. Now more and more health is more about prevention. What are some of the diseases that can be associated with some of these health indicators? I have had the opportunity to work in the areas with stars by them. I will briefly go over the findings of Behavior is a great concern because disease is cornern.

Determinants of Health Definition: Broad classes of factors that are powerful in their cumulative and aggregate effects on health They are forces that shape behavioral and environmental risk factors Categories of factors: Personal determinants Social determinants Economic determinants Environmental determinants Cultural determinants These are major concerns in the US as we enter into the 21st century. Lifestyle pulls the trigger” by Dr. Elliot Joslin Of all the health determinants, lifestyle factors are among the most controllable and influential factors These are major concerns in the US as we enter into the 21st century. These will be used to measure the health of the nation over the next 10 years. Notice that most of these indicators are not diseases- they are behaviors. Why is that? Science has come a long way. Multi-influences on Food Choices The “moment” of food choice, for humans and other animals, is a step in a series of behaviors organized for the quest for food. There is a arousal by biological and cultural motives, detection of food, decision to accept food… Biological influence Psychological influence Social Influence Cultural influence 6

Biological Influence Two forms: Physiological mechanisms-- Brain What is going on in the body when a food choice occurs Brain How and where information about metabolic state is integrated with information about the environment, other motives These are major concerns in the US as we enter into the 21st century.

Psychological Influence Origin of preferences: Individuals vary widely in their food preferences Genetics Early experience with parents Peer influence External influence, like media Acquisition of preferences: Exposure to cultural traditions, family practices Food choice in the moment: Physical arrangement of food Beliefs about food Knowledge about the food—taste and health values These are major concerns in the US as we enter into the 21st century. These will be used to measure the health of the nation over the next 10 years. Notice that most of these indicators are not diseases- they are behaviors. Why is that? Science has come a long way. I have had the opportunity to work in the areas with stars by them. I will briefly go over the findings of Behavior is a great concern because disease is cornern.

Social Influence Age: Gender: Social status: Digesting system Meat avoidance is more common in women Women is more concerned with weight Social status: Income Living environment These are major concerns in the US as we enter into the 21st century.

Cultural Influence What is your culture? What is the traditional food? Meaning of food? These are major concerns in the US as we enter into the 21st century. These will be used to measure the health of the nation over the next 10 years. Notice that most of these indicators are not diseases- they are behaviors. Why is that? Science has come a long way.
