I. Food Safety and Sanitation What is food poisoning?

Another name for Food Poisoning is … 1. Food –borne illness A. It is caused by eating spoiled foods or foods containing harmful bacteria. B. This bacteria can get into your food by: 1. Not washing your hands before touching food 2. Unclean counter tops or food containers 3. During food processing and manufacturing

C. Bacteria requires three things to grow. 1. Food A. Bacteria likes the same foods we like 2. The right temperature A. 40-140 degrees. Bacteria doesn’t like to be too cold or too hot. B. Keeping food refrigerated below 40 degrees prevents bacterial growth. C. Cooking food above 140 degrees kills bacteria 3. Moisture A. Liquids, juices, creams, & sauces B. Bacteria doesn’t like to be dry, that’s why we don’t have to worry about foods like chips, cereal, crackers, etc.

2. Cleanliness A.Keep the kitchen free from pests. No ants, roaches, mice or rats Also keep your pets off the kitchen counters B.Wear clean clothes while handling food. You could also wear an apron

3.Wash your hands…. A.Before touching any food B.After you cough or sneeze C.After using the toilet D.After touching pets E.Wash hands with warm water and soap. 1.How long should you wash your hands? 2.Experts say you should wash your hands for about 20-30 seconds ( as long as it take to sing the ABC song) If you have a cut or soar on your hands, be sure to wear rubber gloves. You don’t want bacteria to get in your cut.

4.Dishes and Silverware A.When cooking, use a clean spoon each time you taste your food. Tasting, then stirring with the same spoon spreads bacteria. B.Hold silverware by the handles C.Don’t use glasses, or dishes that have chips or cracks. 1.Bacteria can hide in the cracks and make you sick

5.Dish Towels A.Use a separate towel for wiping hands and drying dishes. B.Don’t dry dishes with the same towel you’ve been cleaning the kitchen with. C.Paper towels are great for drying hands, you can throw away the dirt and bacteria.

No licking fingers!!!!!! This will spread germs & bacteria!

6.Can you die from food poisoning? A.Yes, but most people don’t. B.You may wish you were dead, because you get very sick. 1.Nausea 2.Diarrhea 3.Vomiting 4.Fever The people who have a higher risk of dying are babies and elderly people.
