Figure 1 A Model Illustrating the Disulfide-Bond Formation of Protein and Its Protease Resistance. In seed germination, disulfide bonds of storage protein are reduced by Trx before protease digestion. However, animals seek to digest protein without prior unfolding, and this occasionally leads to the generation of protease-resistant fragments.
