Nutritional Analysis

Nutritional Analysis It is important to eat a wide range of foods to ensure that your body gets a good mix of nutrients. Sometimes you may need to adapt a recipe to improve its nutritional value.

Food Tables Food tables can be used to find out the nutritional value of foods. The table below shows how much iron is in a blueberry pancake. Ingredient Amount of iron in 100g of ingredient Amount of ingredient in recipe Amount of iron in recipe used Plan Flour 1.94mg 100g 1.94x1=1.94mg Eggs 1.72mg 1.72x1=1.72mg Semi-Skimmed milk 0.02mg 300g 0.02x3=0.06mg Sunflower oil 0.1mg 20g 0.1x0.2=0.02mg Blueberries 0.55mg 150g 0.55x1.5=0.83mg Total iron in recipe (serves 4) 4.57mg Total iron in one serving 1.14mg

Computer Programmes There are lots of websites that will calculate nutritional data for you http://explorefood.foodafactoflife.org.uk

TASK Choose a basic recipe for ‘scones’ from the internet and use an online site such as http://explorefood.foodafactoflife.org.uk to analyse its nutritional benefits. How much carbohydrate is in the recipe? How much vitamin E is in the recipe? How much calcium is in the recipe? Extension: How many calories (Kcal) are in the recipe? How could you reduce the calories? (play around with swapping some ingredients)
