What is the chemical process of ‘fermentation’? First, we must understand the difference between CELLULAR/AEROBIC and ANAEROBIC RESPIRATION

What are some benefits of food fermentation? Consider the benefits to growers / for families / for the body / as a means of cultural tradition / as a practice of ecological resilience.

Fermentation is one of the oldest food preservation processes practiced worldwide. Fermentation can be used to preserve raw beans, milk, dairy, fish & meat, and vegetables! Indonesian tempeh (c. 1815 or as early as 12th / 13th centuries) - fermented soybeans inoculated with Rhizopus spp. moulds, a type of filamentous fungus, that spreads through the beans making a sliceable cake.

MAKING SAUERKRAUT WITH HERBS FROM THE ORCHARD - an adaptable lacto-ferment spotlight Thyme (Thymus vulgaris) Oregano (Origanum vulgare) Bee Balm (Monarda didyma) These three aromatic herbs of the mint family (Lamiaceae) are common to POP orchards and can be harvested fresh from spring - fall (leaf & flower) and incorporated into sauerkraut as flavoring! HARVEST TIP: To harvest, clip the stem with scissors or hand-pruners just above the leaf cluster to encourage the plant to regenerate quickly.
