About ICDE

Disciples Escoffier International is the premier gastronomic society established in France to maintain the good name and traditions of French Cuisine, counting over 25’000 members in 26 countries, including some of the world’s most respected chefs.

Auguste Escoffier

Auguste Escoffier (1846-1936) the legendary “King of Chefs, Chef of Kings”, widely considered the father of modern French cuisine a pioneer of the fine dining industry and co-founder of the Ritz Hotels While introducing unprecedented standards of sophistication and elegance to the world of fine dining and luxury hospitality, Escoffier always insisted that dishes be simpler, lighter, and made from fresh ingredients.

CCA Manila partners with prestigious French culinary school, Institut Culinaire Disciples Escoffier The Institut Culinaire Disciples Escoffier (ICDE) Philippines is the second professional culinary school of Disciples Escoffier International in Asia which was launched last September 19, 2016. The first was established in Hong Kong two years ago.

Diploma in Culinary Arts

The Disciples Escoffier Diploma in Culinary Arts is a 6- month intensive training program, where you will learn in a short amount of time the fundamentals of culinary arts, including over 100 recipes and 100 culinary techniques.

Professional Training in French Cuisine The curriculum is entirely based on the tradition and fundamentals of French gastronomy. The core program is firmly rooted in the classic foundations of Escoffier’s “Guide Culinaire”. Escoffier’s “Guide Culinaire” is widely held as the “Bible” of French modern cooking, and still used every day by chefs around the world. Escoffier’s techniques and recipes, the stocks and sauces, the menu composition, all provide the building blocks for exploring further all types of Western cuisines. Our comprehensive curriculum is designed to teach students the actual practice and art of cooking through theory, technique, palate training, speed and teamwork. These will be the essentials for success in a culinary career.

4 Multiple-Diploma Program At the end of the program, students will be awarded with a Center for Culinary Arts Manila Diploma accredited by the American Culinary Federation.

4 Multiple-Diploma Program ICDE is a private education provider, specializing in delivering Culinary and Pastry Arts training programs. Upon passing final exams, students will be awarded with ICDE’s Chef Apprentice in Culinary Arts Certificate.

4 Multiple-Diploma Program Additionally, students will also be assessed by a representative from the French Ministry of Education as part of their certification. Once they pass the assessment, students will obtain a French National Diploma in Culinary Studies, further enhancing their prospects to pursue an international career in the culinary arts.

1 Program Structure We aim to provide students with practical, applicable skills that are in high demand within the fine dining and luxury hospitality industry. 90% of the work is conducted in the kitchen-classroom, and the balance is dedicated to home reading to gain a cultural and technical background and understanding of French cuisine. The program has been thoughtfully designed to teach students the core elements of culinary arts. You will learn new skills in each class, and step by step, you will progressively build upon them. The pace accelerates as you progress through each level, and learning is cumulative and fast.

2 Student Life Life is never boring for ICDE-CCA students. Aside from the culinary food tours that the school regularly organizes, there are other alternative learning programs that they can also participate in.
