Soleful Strutters Health Ministry HEALTHY SPAGHETTI & MEATBALL – CHEF ANDREW BUSH Ingredients: 1 Cup Whole Wheat Spaghetti Cooked ½ Cup Chopped Roma Tomatoes 4oz Lean Ground Turkey 2 cloves Garlic ¼ cup White Onions 2 TB Fresh Basil ¼ t Mrs. Dash ¼ t Black Pepper 2 t Dried Oregano 2 Tb Extra Virgin Olive Oil ½ Cup Vegetable Stock Directions: Small chop the onions and garlic, get a medium size sauce pot and add in the olive oil. Turn on heat to medium then add in the onions and garlic, stir until the onion is just starting to become translucent. Add in ground turkey, keep stirring and breaking up the meat until it’s about medium size pieces or smaller if you prefer. Then reduce heat down too low, add in the tomatoes. While it is cooking, stack up the basil and rough chop. Add in the herbs ( basil/oregano), salt, and pepper. stir. After 3 mins add in the vegetable stock. After the tomatoes are soften and the meat is cooked around 7-9 mins, add in cooked whole wheat spaghetti. Turn off heat and toss. Top with fresh parmesan.
