Great customer service stories

Organization of service in special cases Corporate and Social Events A meal isn’t just a meal, it’s an opportunity to make connections.

RULE 1: UNDERSTAND YOUR AUDIENCE AND EVENT It is key that you know your audience. Is the event social or professional? How many guests will attend? Are there potential allergies, or other restrictions based on company policy, cultural or religious considerations? Knowing your audience and event will help you plan service levels, meal and drink options, and how much food and beverage to order.

RULE 2: TIME AND NUMBERS MATTERS Venues will require that you provide a guarantee, 48 to 72 business hours prior to the event. The guarantee is the number of meals you order and will be charged for. Also understand the overset numbers. This means that when confirming for 100 meals, the venue will have between 0 to 5 extra meals on hand. Planning time for functions is also important. Allow 30 to 40 minutes for a breakfast, a minimum of 45 to 60 minutes for lunch, depending on the amount of people and how the meal is served.

Self-serve buffet options may require less time and are ideal for smaller groups.

Refreshment breaks for 100 should be a minimum of 15 minutes, 30 minutes for groups up to 1,000 and 45 minutes for groups larger than 1,000.

RULE 3: HOW MUCH TO ORDER BREAKFAST and BREAKS

When hosting a conference where participants will be served a working lunch, be sure to offer other snacks, beverages, and meals around the allocated lunch time, in the same manner in which the lunch will be served. Depending on the size of the crowd and on the venue, choose between having self-service stations or waiters on standby.

Food should be served in small, easy to hold and easy to eat from dishes. Portion sizes should be small and there should be an option to ask for seconds. Cutlery and serviettes should be easily accessible.

Foods should be easy and clean to eat Foods should be easy and clean to eat . Pies, pastries and saucy wraps should be avoided. Foods that can be eaten with one hand, such as; veggie or fruit skewers, miniature sandwiches, mini pizzas or burgers are always crowd favourites.
