Basic Pasta - Pairs Ingredients: Equipment: Preparation: Method: 100g strong plain flour 1 egg 1 tsp olive oil Equipment: Large mixing bowl Palette knife Pasta Machine Preparation: Crack the egg into a jug to make sure it’s fresh Change the colour dot to indicate which year group the recipe is for. Enter in the name of the recipe at the top. Post it notes on the original recipe indicate changes. Please see me if you are unsure. Thanks! Y7 – YELLOW Y8 – HOT PINK Y9 – BLUE Method: Make a well in the centre of the flour Add the egg into the centre of the flour, then add 1 tsp olive oil into well. Use a palette knife to stir the egg around, gradually mixing in the flour The mixture will start to thicken, stop stirring when it becomes a soft dough. Cover the mix with the remaining flour and begin kneading with your fingers to thicken into a dough. Remove the dough from the bowl. Pulling the edges of the dough, fold and push into the centre. Start kneading the dough by pushing it against the table with the palm of your hand, keep going until you have a soft but elastic dough ball Leave to rest for 5 minutes while you wash up. Cut each ball of dough in half and use a rolling pin to roll and flatten into a rectangle shape Starting with the widest setting, pass the dough through the pasta maker twice on each setting.
