Use a palette knife to stir the egg around, gradually mixing in the flour The mixture will start to thicken, stop stirring when it becomes a soft dough. Cover the mix with the remaining flour and begin kneading with your fingers to thicken into a dough. Remove the dough from the bowl. Pulling the edges of the dough, fold and push into the centre. Start kneading the dough by pushing it against the table with the palm of your hand, keep going until you have a soft but elastic dough ball Leave to rest for 5 minutes while you wash up. Cut each ball of dough in half and use a rolling pin to roll and flatten into a rectangle shape Starting with the widest setting, pass the dough through the pasta maker twice on each setting.
